Entrepinares Iberico Cheese is strictly made according to the blend of milks set by the Spanish Royal Decree on Iberico cheeses (a maximum of 50% of Cow’s milk, a minimum of 15% of Goat’s and Sheep’s milk Cheese). Iberico cheese is one of the most popular cheeses abroad.
Balanced flavor, slightly acid and salty. Firm texture pleasant to chew. Medium level of persistency in mouth and a harmonious aftertaste. Medium intensity level of cow’s, sheep’s and goat’s milk scents, leather and nuts.

Pairing suggestions: our iberico semi-cured cheese matches perfectly with red wines from Ribera del Duero or Méntrida. Highly cured ibericos go well with red wines with body and high alcohol content from Rioja, Ribera del Duero or Priorato.
