Semi-firm raw, organic Manchego cheese produced in La Mancha, Spain. Wheels are light brown with a natural zigzag rind. The pattern recalls a time when the cheese was molded in baskets of woven esparto grass. It has a straw colored paste with few eyes and a supple texture. With aromas of buttered popcorn and lanolin, it perfectly balances salt and sweetness with herbal, nutty notes. It has a creamy mouthfeel with just a bit of crumble. Available in wheels or 200g wedges.

Organic Manchego Mitica® is made with raw milk and is certified USDA organic. This farmstead cheese is made on a sustainable family farm with both black and white Manchega sheep. Manchego is a DOP cheese which must be made only from the milk of Manchega sheep that graze in the provinces of Albacete, Ciudad Real, Cuenca and Toledo, which form the region of La Mancha. The Parra family has been making organic products, including wine, in the region of Cuenca since 1993. They began making cheese when brother Javier married into a local cheesemaking family, and his wife Ana is now the head cheesemaker. Today, 3500 sheep graze on their organic, sustainable farm, providing the rich, flavorful milk for their award winning Manchego DOP cheese. This cheese is traditionally paired with membrillo and Rioja. It is excellent with fig jam, or shaved for any number of culinary uses.
