Interlude from Chef Terrence Brennen

This aptly named treat is the perfect in-between course.
4 perfectly ripe plums
6 ounces Zamorano cheese

Using a sharp paring knife, remove two thin wedges of plum and plate alongside remaining fruit. Slice cheese into quarter-inch wedges, three wedges per plate. Serve with a dessert fork and knife.
