Montaje de Mahón

Assemble this Mediterranean montage as you would a still life painting, the finale to the perfect repast. Your color palette is the flavor of Spain´s Balearic Islands. Find quince paste at specialty food markets.
8 ounces Mahón cheese
15 ounce package quince pasteçlarge walnuts in shell
2 ripe apricots or peaches

Using a nutcracker, carefully halve nuts along meridian, keeping shells intact. Slice cheese into four two-ounce wedges. Slice fruit into sixths and plate three slices. With a sharp knife, slice two pieces quince paste, one-half inch thick. Artfully arrange ingredients on dessert plate.
