Matured for two months in a humidity controlled environment, at a temperature from between 44 and 46 degrees

This artisanal cheese is produced in the Basque Country and Navarre in northern Spain. It is made from raw milk of the company´s Latxa breed of sheep.

The cheese is a homogeneous pale yellow, has almost no holes. The rind is hard. It has an intense and characteristic aroma of matured sheep´s milk. The taste is clean and consistent with hints of natural rennet. Artzai Gazta is available all year and pairs well with white wines, Txacoli (slightly sparkling, dry white wine from northern Spain), and young red wines.
