Carpuela Manchego D.O. is made exclusively from the pasteurized milk of the Manchega sheep by the Gomez Moreno Family of Herencia,Spain. This cheese is made from the “Raw Milk” of the Manchega sheep, collected from the family’s flock and neighboring shepherds.
