Hacienda Zorita Queso de Dehesa Curado

Pressed raw sheep´s milk cheese aged for a minimum of 6 – 12 months

Cutting reveals a straw-yellow color and slightly raised rim. The cheese is clean, balanced and has an intense aroma and lactic texture, characteristic of quality sheep´s milk. There are hints of leather, soft mellowness and slightly toasted dry fruits. The rind has a hint of cellar, moist earth and wild mushrooms. In the mouth, a very elegant acidity and slight sweetness is noted, with hints of dry hay and very pleasant aftertaste reminiscent of dried fruits

Hacienda Zorita Queso Curado pairs well with toasted dried fruits (nuts, almonds, pistachios), moderately sweet fruits (grapes, apples, pears), barrel fermented white wines and elegant, velvety red wines, three years and older.

Hacienda Zorita Organic Farm also produces Torta de Dehesa, a soft cheese made from raw sheep´s milk; Slow Thyme cheese made from raw Verata goat´s milk; and an organic cheese aged in Syrah wine.
