Semi-hard cow´s milk cheese aged over 8 months
This pleasant, mild, cow´s milk cheese is from the Balearic Island of Minorca.
Produced with thermalized milk (not pasteurized), the paste of this Mahon PDO cheese is pale yellow in color with numerous eyes and a characteristic orange rind. Young Mahon is aged 4 months and is mild with a nutty finish. The Mahon Reserva cheese is aged 10-12 months. It is sharp and often has sweetness in the finish. The producer rubs it with olive oil, giving the cheese a softer texture, enhancing the flavor, and offsetting the brash sharpness into a more balanced cheese. It melts on your tongue.
